Recipe - Fish Ball Noodle Soup

47.  Fish Ball Noodle Soup



Thai Noodles



¾ cup



Fish- Blue grenadier fillet



150g



Chicken Stock



1 cup



Soy Sauce



½ tb



Brown Sugar



½ tsp



Garlic



½ clove



Snowpeas



½ cup (chopped)



Lime Rind



1 tsp



Star Anise



1 whole



Ginger



1cm piece



Coriander leaves



¼ cup

Preparation Method:  On high heat, bring to the boil chicken stock, ginger, star anise, sugar and the soy sauce, then simmer for 15 minutes.  Whilst the sauce is simmering, put sliced fish, coriander leaves, garlic and lime rind together in food processor/blender.  Roll this mixture into tablespoon sized balls.   Place noodles in boiling water in a heatproof bowl and let it sit for around 5 minutes.  Strain the chicken stock sauce and then return it to the pan with the fish balls and cook for around 10 minutes.  Add snowpeas until tender, then serve with noodles.
